Monthly Reflections | January

My "currently" recap for the month!

It's so hard to believe that tomorrow is February.  I mean, really?  

For me, January was a month for settling in, stretching out and getting situated in some new routines. I don't know about you, but I really feel like it was a trial run for the start of the new year and, at the horizon of the new month, I'm only now feeling like I'm ready to push ahead with making my new year's goals happen.  So, I'm calling a re-do on the start of 2016.

A staple in my house when I was a kid growing up was tater tots.  They were quick, easy to prepare, and most kids liked them.  Typically, they serve as a side dish for chicken nuggets or cheeseburgers, so I thought I'd feature these little potato bites as the star in this recipe.

It was a crazy busy weekend and a bittersweet one at that.  I got a shipment of my belongings/portion of the divorce settlement delivered and I've spent the last couple of days going through and sorting everything and finding a place for it all in my new home.  It's tough.  I won't lie, but I just keep reminding myself that this is one chapter closing and an even greater one is just beginning.

Have you ever tried Biscoff European cookie spread?  Until today, I had heard of it, but had always been a little wary of giving it a go,  I was recently challenged to create a recipe using this new -to-me product and had some fun in the kitchen this morning letting my culinary imagination run free.

I was recently given the opportunity to hear the new Passion album titled Salvation's Tide is Rising before the album is released on 1/29/16.  I've always been a fan of contemporary Christian music and was excited to hear this new collection.

We are in a season of new.  You can't miss it.  Starting in October, television ads blare out why your kids should have the newest toy for Christmas and there is a mad-dash on Black Friday to be the first to own it.  Car ads say that you should upgrade from your older model to the new, shiny deluxe edition, and so we pay a hundred dollars more a month for a notch up in gas mileage.  God forbid we make it through a year without a certain electronics company telling  us why their newest phone or tablet or watch is the latest and greatest and you bet we will stand in line for hours just to get it the day it comes out...

Howdy, friends and happy Monday! So far, January has started off as a dull ache.  I spent the whole first week in bed with bronchitis/pneumonia (I know, yuck!) and didn't get much done around here, but I'm feeling much better and will try to tackle some of the work I left behind.
