With the official start of football season around the corner, it's time to tailgate! When football season comes around, this is one of my most-requested family-favorite recipes. The beer becomes almost a gravy in the sausage and vegetables and it makes the perfect fall dish. Serve with a big crusty loaf of bread and you have yourself the perfect tailgate feast.

YIELD: 8-10 SERVINGS  PREP TIME: 20 MINUTES  COOK TIME: 2 HOURS 
TOTAL TIME: 2.5 HOURS

INGREDIENTS:
  • 24-36 oz. Kielbasa sausage (2 packs)
  • 5 lbs. Russet potatoes
  • 16 oz. baby carrots
  • 16 oz. sliced mushrooms
  • 16 oz. mini sweet peppers (or equivalent of another type of pepper)
  • 4-6 12 oz. bottles of beer (any kind will do)
  • salt and pepper, to taste 
  • 2 aluminum baking dishes
DIRECTIONS:
  1. Preheat oven to 425° or start your grill and preheat to high/hot (1-2 seconds in hand test)
  2. Slice Kielbasa sausage into 1-inch chunks. Chop potatoes and peppers (and carrots if you are using whole ones) into 1-inch chunks. 
  3. Divide sausage, potatoes, peppers, carrots and sliced mushrooms between two aluminum pans. Season generously with salt and pepper.
  4. Pour beer evenly between the two pans to cover the bottom inch of each pan, cover with aluminum foil and bake in the oven or on the grill for up to two hours, stirring occasionally and adding more beer as necessary, until vegetables are tender. You do not want the beer to evaporate completely, so make sure you add enough during the cooking process so there is plenty of steam to cook the veggies.
  5. Once vegetables are tender, remove from heat and let rest for ten minutes before serving.
