Football season is here! In celebration, I've joined a group of bloggers from all over the country - all of whom are big football fans - to bring you football-inspired recipes this season. Last month, we shared our favorite tailgating recipes and now we are sharing some recipe ideas for celebrating on game day. 

We are big Washington Redskins fans around here. Whenever there is a game on, we gather around the tv to watch. We are also big foodies, so our football games are always accompanied with lots of tasty snacks. I was inspired by our local team to share these delicious and satisfying double-stuffed potato skins with you. They can be topped with traditional ingredients like I've done here or you can add your own toppings to suit your tastes. Keep reading for the recipe!

Double-Stuffed Potato Skins #foodiefootballfans - A Simpler Grace

DOUBLE-STUFFED POTATO SKINS
YIELD: 12 SERVINGS  PREP TIME: 10 MINUTES  COOK TIME: 1 HOUR + 15 MINUTES + 15 MINUTES
TOTAL TIME: 1 HOUR 40 MINUTES

INGREDIENTS:
  • 6 large baking potatoes (russets work the best)
  • 2 cups sour cream
  • 1/4 cup butter, softened
  • 1 cup cheddar cheese, shredded + 1/2 cup reserved for topping
  • 6 strips bacon, cooked until crispy and chopped for topping (can also use bacon crumbles)
  • 1/2 tsp. fresh chives, chopped for topping
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper, freshly ground
DIRECTIONS:
  1. Preheat oven to 400°F.
  2. Scrub potatoes with hot water and pat dry. Using a fork, pierce the sides of the potatoes and place them directly on the middle rack of your oven. Bake 60 minutes until the tip of a knife easily pierces the center of the potato.
  3. Remove potatoes from oven and place on a cutting surface. Using a sharp knife, slice the potatoes in half, lengthwise. Gently scrape the potato out of the skins with a spoon and place in a bowl. The skins will tear very easily, so it's ok to leave a little potato in them.
  4. Place potato skins on a baking sheet and return to oven for 15 minutes so they crispen up.
  5. To the bowl of potato, add sour cream, butter, cheese, salt, and pepper. Mix until all ingredients are incorporated and potato is completely mashed.
  6. Remove potato skins from oven and fill with potato mixture. Top with remaining shredded cheese and chopped bacon and return to oven for 15 minutes until cheese melts and potatoes are heated through.
  7. Sprinkle with chopped chives and serve.
The total time for this recipe may vary depending on the size of your potatoes and your topping choices. Have fun and get creative with those toppings. This is one time it's ok to play with your food!

There is nothing better than a portable bite of mashed potatoey goodness topped with melted cheese and bacon. Am I right? And for those of you wondering, this pescetarian did make a few without bacon for herself. :)
