If you and I had coffee...

We'd meet up at my place for DIY shamrock shakes because we both recently read this article and we just know we can make a healthier (and probably tastier) version ourselves. We'd gather around the blender with our mint flavored ice cream and maybe even a splash of Bailey's to booze them up before camping out on the big cozy couch in the living room and gazing out at the snow that is gently falling outside. This is what March looks like in the mountains of West Virginia...


If you and I had coffee...

I'd ask you how you've been and what you've been up to, then I'd want to know one trending news story that you are sick of hearing about. For me, it would be anything relating to Rose McGowan. If you haven't heard the story, I'd tell you that early last year, she flew into Dulles Airport (my local hub) and was caught and charged with a felony cocaine possession, which she promptly blamed the Harvey Weinstein camp for planting on her to get revenge for her accusing him of rape. Needless to say, it's been all up in my local news and I. Am. Over. It. I will reserve my own opinion of her and say that one need only to view some recent video footage of her to make a fair assessment of what is true and what is not. Eek!

If you and I had coffee...

I'd ask you what your plans were for spring break and Easter since both are quickly approaching. I'd tell you that I am, once again, planning the big family dinner and I've been busy pulling recipes for all the dishes I am going to make. I have received a special request from one of my brothers for some buffalo fried deviled eggs, which look interesting. I'll be sure to report back with how they turn out. I won't be eating them myself because of an egg allergy, but I'm sure my brother will tear them up. Deviled eggs of any kind don't last long around him. Also, anyone else think it's weird that we have DEVILed eggs on the day some celebrate the birth of Christ... I'd laugh and apologize for my mind bouncing all over the place. I've been feeling a little silly this month...

If you and I had coffee...

I'd ask you what has been inspiring you lately. I'd tell you that I've been finding inspiration in new and exciting places recently and that this Instagram account has been one such place. Eric Ward is an amazing photographer who uses lines and light to create such movement in his images. I could scroll through his feed for hours. I'd say I also have been finding inspiration of a different kind on YouTube. I've subscribed to a handful of vegan foodies and have been learning all sorts of new recipes and meal prep ideas. Give me all the vegan Mexican food, please!

If you and I had coffee...

I'd tell you that I am in full future stepmom mode over here. I'd say that I never had that overwhelming desire to be a mom when I was younger and I always thought I was broken because of it. When I was in my twenties, all of my girlfriends couldn't wait to get married and start families of their own and I was always the oddball because I never wanted to. Now that I have someone in my life who comes as part of a packaged deal with two kids of his own, I've found myself absorbing all the mom stuff I've been missing out on for the last twenty years. I'm reading all the mom articles and making mental notes of their favorite foods and how they need to be comforted when they're sick or have had a bad day. I've always adored kids and have had many of them in my life, with lots of younger siblings and nieces and nephews, but I am in love with the idea of being a stepmom to these little men.

If you and I had coffee...

We'd make our way back to the kitchen, finish slurping the last of our shakes and I'd hand you a little box of homemade snickerdoodles I'd made for you, just because you're such an awesome friend. You'd untie the twine bow from around the box and sneak a bite of a cookie before giving me a hug and promising we'd meet again soon. I'd walk you outside to the chilly snow-covered ground, watch as you pull out of the driveway and wave goodbye until our next coffee date.

  1. I love this post! Now, I need to read about how to make my own Shamrock shakes. Definitely with Bailey's! It sounds like you are going to be an awesome Stepmom. And too funny about the Deviled eggs for Easter!

  2. Ooh homemade Shamrock Shakes. I could go for that, especially if they weren't AS bad for you. I haven't been hearing too much about Rose McGowan, but I'd be like you...totally over it. I've heard really different things about her, so yeah, not interested anymore. hah That's really sweet that you're enjoying the stepmom life! :)

  4. I'd love to make homemade boozy Shamrock Shakes! Those sound delicious. I'd tell you I'm sick of all the Kardashian baby news that seems to be trending still. I'm all for fluff news stories to take our mind of some of the more serious ones, but I just can't with them. I'd tell you I'm excited that you're stepmom mode and that I think it's awesome that your relationship is going so well. And I'd want to meet this guy. :) I'd hug you and thank you for the cookies!

  8. 1. Those deviled eggs sound delish! 2. I read Rose's tweets on Twitter before seeing her interviewed on TV. The interviews changed how I thought of her due to the way she came across. 3. I discovered something fabulous recently: drinking coffee out of a waffle-cone coated with chocolate. I first had it in a chic coffeehouse and then re-created it at home. Next time we have coffee together, I'm bringing the cones!

  14. I have to imagine it would be easy to make a shake that doesn't have all the sugar and calories of the McDonald's one... I'm so excited about being a stepmom. :)
