Pumpkin Snickerdoodle Ice Cream Sandwiches

I'm sharing my recipe for #pumpkin #snickerdoodle #icecream sandwiches on the blog today!
As soon as September rolls around, I start craving pumpkin. By October, it's a necessity. So, I couldn't resist trying a new recipe this month and combining a few of my favorite things - pumpkin, snickerdoodles, and ice cream - in one of the best ice cream sandwiches I've ever had.

These cookies are perfect to make ice cream sandwiches out of because they have a firm, almost crispy outside, so they hold up to the moisture of the filling, yet they are still soft and chewy on the inside. Pumpkin Snickerdoodle Ice Cream Sandwiches - A Simpler Grace

PUMPKIN SNICKERDOODLE ICE CREAM SANDWICHES
YIELD: 14-16 SERVINGS  PREP TIME: 30 MINUTES  COOK TIME: 10 MINUTES/BATCH
TOTAL TIME: 40 MINUTES

INGREDIENTS:
  • 1 cup unsalted butter, softened to room temperature (not melted)
  • 1/2 cup pure canned pumpkin (not pumpkin pie mix)
  • 1 1/2 cups granulated sugar
  • 2  teaspoons pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice (or combination of ground cinnamon, ginger, nutmeg, clove)
  • 2 2/3 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • Your favorite vanilla bean ice cream
Additionally, you'll need to combine the following ingredients to roll the cookie dough in:
  • 1/2 cup granulated sugar
  • 1 tbsp pumpkin pie spice

DIRECTIONS:
  1. Preheat oven to 350ยบ and line your baking sheets with parchment paper.
  2. In a large mixing bowl, combine room-temperature butter, pumpkin, granulated sugar, and vanilla extract. Mix until just combined. Add the dry ingredients and egg and mix until the dough comes together and easily scrapes from the sides of the bowl. The dough will be sticky but firm enough to roll into balls.
  3. In a small bowl, mix the extra sugar and pumpkin pie spice until well combined. 
  4. Using a spoon or 1-ounce scoop, portion out cookie dough and roll into balls. Roll each in the spiced sugar mixture to coat. Place two inches apart on baking sheet and bake for 10 minutes until golden brown and just set in the center.
  5. Remove from oven and immediately transfer cookies to a cooling rack. Cool completely.
To assemble the ice cream sandwiches:
  1. Using a scoop, drop ice cream on the underside of one cookie. Use another cookie to press the ice cream so that it holds the cookies together and "smooshes" to the edges of the cookie.
  2. Place on a tray and immediately place in the freezer.
  3. Best if enjoyed same day, but can be wrapped in parchment and stored in the freezer for up to five days.

These were so much fun to make and even more fun to eat. They are perfect for a season where the weather is getting cooler and are sure to be a family favorite for many years to come!

  11. I'm a huge fan of snickernoodle, but I've tried tried anything that is pumpkin snickernoodle. I'm always up for ice cream, so I would totally be down with trying these!
